Delineating the cold and dense QCD matter remains a theoretical challenge. A deeper understanding of this phase of matter could offer valuable insights into strongly interacting quantum systems and physics beyond the Standard Model. In this talk, I will present a robust framework to infer properties of QCD in this non-perturbative regime from observations of neutron stars. Specifically, I will discuss how astrophysics may shed light on the nature of quark deconfinement at finite density, and the possibility of identifying color superconductivity from observations.
